Coconut Nut Bread

Ingredients

2 cups flour

1 3/4 teaspoons baking powder

1/4 teaspoon salt

1 1/3 cups sugar

1/4 teaspoon baking soda

2/3 cup oil

2/3 cup buttermilk

1/2 cup flaked coconut

2 large eggs

1 teaspoon coconut flavoring

1/2 cup chopped nuts

Directions

Mix dry ingredients ( flour, baking powder, soda, salt and sugar) in large
mixing bowl.
Add oil, buttermilk, coconut, eggs, coconut flavor and walnuts to dry
mixture. Mix until dry ingredients are moistened. Pour into prepared pan
and bake l hour and 15 minutes (insert toothpick in center of loaf - comes
out clean). Bake at 350 degrees. Do NOT open oven door during baking
process.
I use three small pans and bake 55 min.
